Really great food is like edible happiness. Growing up my home was filled with it, and going out for a good time meant seeking incredible nibbles from our favorite places that were dotted all over Connecticut. I decided to work with food very early on. I was still in high school when I chose baking as my profession, and I have never looked back. I loved what I did, but it hadn't occured to me yet that food could be something more than just delicious. That it could be, uplifting...
After culinary school I went to work for a tiny little bistro in Providence RI as their pastry chef. It was a tough time. Long hours, very little money, few friends, and family that was way too far away.
I was walking home one day and it all caught up with me. I was so tired mentally and physically that I just wanted to sit someplace beautiful for a while. I walked in to a lovely restaurant on federal hill and slumped in to a seat at the bar. I didn't have enough money to order much, so I asked for water and one of their small plates, which that day was gnocchi quattro formaggio. I will never forget the place that first bite took me... My mind was racing with all of my worries and problem... And then everything went dead quiet in my head as I chewed... Pillowy potato gnocchi, carmelized roasted cherry tomatoes buried in an astoundingly good cheese sauce and fresh herbs. I forgot where I was for a minute. I forgot WHO I was for a minute... It was so wonderfully good that I could not process anything else for the moment. The last bite was as good as the first, and for the length of that meal I didn't have a care in the world. I walked out of the restaurant refreshed and inspired, and I have never forgotten...
I try to recreate that experience for every customer, every friend, and every innocent bystander that we bake for at Huckleberries ( it is well known that I will try to feed anyone within 10 feet of me, so you have been warned...). If we don't love it, we don't sell it. We use the best ingredients that the land and the seasons have to offer and we make sure to treat them with respect. Good food is not only nourishment, it should refresh you and take you to a better place, even if just for a little while. I hope our hand crafted goodies make you as happy as they make me!
